An easy chicken, rice and vegetable bake divided into four weekday portions.
I like this chicken and rice bake because it turns familiar ingredients into several meals without a stack of pans. The rice cooks in the same dish as the chicken and vegetables, absorbing the stock and seasoning. When the batch is ready, I weigh or divide it into four containers. That gives me lunches that are easy to log and easy to reheat.
The word light describes the ingredient choices, not a promise that everyone should eat the same portion. Chicken breast and lighter cooking cream keep the energy moderate compared with many creamy casseroles, but the actual values depend on the products and serving size.
The most common failure is dry rice. I use hot stock, spread the rice evenly and keep the dish covered for most of the cooking time. Different rice varieties absorb different amounts, so the packet instructions remain useful. If the dish dries before the rice is tender, add a small amount of hot water rather than leaving hard grains in the finished meal.
Chicken pieces should be similar in size so they cook evenly. Food safety matters more than a precise oven time. Check that the thickest pieces are cooked through and that no raw chicken juices remain. Avoid contaminating vegetables or utensils with the raw meat.
Frozen vegetable mixes make this quick, while fresh pepper, broccoli or carrot also work. Large frozen pieces may cool the dish and extend cooking time. Turkey can replace chicken. A strongly flavoured stock may already provide enough salt, so I taste before adding more.
This is the kind of ordinary meal that supported my own weight loss. It was not exciting every day, but it was dependable. Knowing lunch was ready made it easier to follow the plan I had chosen. If you add cheese, oil or sauce, include it honestly in the recipe rather than assuming small additions do not matter.
After removing the foil, I let the casserole stand for five to ten minutes. The rice absorbs the last loose liquid and the portions become easier to divide. If the rice is still firm, I add a small amount of hot stock, cover the dish again and continue cooking. I do not solve hard rice by simply adding cold sauce at the table.
I divide the finished dish into four containers while the chicken and vegetables are still evenly distributed. The calculation uses raw rice and the specific cooking cream shown in the ingredient list. A different cream, extra cheese or oil must be entered separately if used.
