Soft banana baked oatmeal prepared as four easy breakfast portions.
Baked oatmeal is useful when I know the next few mornings will be busy. I mix one dish, bake it and divide it into four portions. The result is softer than an oat bar and firmer than porridge. It can be eaten cold, reheated or served with a measured spoonful of quark or yoghurt.
Ripe banana provides most of the sweetness. I use bananas with brown spots because they mash easily and taste sweeter, which means the recipe does not need a large amount of added sugar. Banana size varies, so weighing the peeled fruit makes the nutrition estimate more reliable than writing only two bananas.
The mixture looks loose before baking because the oats need time to absorb the milk. After baking, I let the dish stand before cutting it. Slicing immediately can make the centre look undercooked even when it would set during cooling. If the surface browns too quickly, cover it loosely near the end rather than increasing the temperature.
Different oats absorb liquid differently. Ordinary rolled oats give the texture I prefer. Very fine instant oats can become dense, while large thick flakes may need a little more time. The centre should no longer move like liquid, but it does not need to become dry.
The calculator divides the listed batch into four servings. For even better accuracy, weigh the finished bake and divide the weight by four. Evaporation changes the weight per one hundred grams, but not the total energy in the ingredients. Milk, toppings and optional nuts should match what is entered.
This is not a magic weight loss breakfast. It is simply predictable, filling and easy to prepare ahead. In my own routine that combination reduced rushed decisions and made food tracking feel less like constant work. Apple, blueberries or cardamom can be added, but substantial changes should be reflected in the calculation.
I let the baked oatmeal cool in its dish for at least ten minutes before cutting it. The centre continues setting during this time, so the pieces hold together more cleanly. I then divide the dish into four portions or weigh the finished bake and calculate one quarter of the total weight. This keeps the calculation tied to the batch I actually made.
The portions can be refrigerated in covered containers and reheated with a small splash of milk. The bake also works cold. If I add quark, yoghurt, berries, nut butter or syrup when serving, I record those separately because they are not included in the base recipe.
I check the centre before removing the dish, because oven temperatures and baking dishes can change the required cooking time.
