Stuffed peppers with beef and rice

Bell peppers filled with lean minced beef, rice and tomato, baked as four easy portions.

A portion that largely defines itself

Stuffed peppers are convenient because the peppers create visible portions. I still weigh the filling and divide it evenly, but I do not have to estimate where one serving ends in a large casserole. The filling combines lean minced beef, rice, tomato and onion, while the pepper becomes softer and sweeter in the oven.

I cook the minced beef before filling the peppers. This makes it easier to confirm that the meat is properly browned and to remove excess liquid if necessary. Onion is cooked at the same time and the mixture is seasoned. The crushed tomatoes are stirred in together with the rice. The rice should be cooked before mixing because uncooked rice would need considerably more liquid.

Preventing watery or dry filling

Crushed tomatoes keep the filling moist, but too much loose liquid can collect in the dish. If the crushed tomatoes are very watery, I drain off a little of the liquid before mixing. At the other extreme, a very dry mixture becomes firmer in the oven. The filling should be moist enough to spoon easily but not run from the pepper.

Cheese is measured and added near the top. It gives flavour and helps the surface brown. More cheese is an option, not a mistake, but it belongs in the calculation. The same applies to sour cream, sauce or bread served alongside.

Choosing peppers and dividing the batch

Peppers of similar size cook and portion more evenly. Very large peppers may need additional time. I arrange them snugly in the dish so they stay upright. If a pepper will not stand, trimming a tiny slice from the base can help without cutting a hole through it.

The recipe makes four servings, but appetite and energy needs vary. The practical value is having a known batch that can be adjusted. Familiar, well-portioned meals like this supported my own weight loss because they reduced guesswork without making food feel clinical or joyless.

Using the same filling in every pepper

I weigh or visually level the finished filling before spooning it into the peppers. Adding a little to each pepper in rounds works better than filling the first ones completely and running short at the end. The Finnish recipe uses cooked rice, not dry rice, and the English calculator follows that same amount and measurement state.

After baking, I let the peppers stand briefly before lifting them from the dish. They soften and can tear when moved immediately. Leftovers are stored covered in the refrigerator and reheated until the beef and rice filling is hot throughout.

If the peppers differ greatly in size, I divide the filling by weight rather than assuming every pepper forms an equal serving.

Instructions

Cook the rice according to the package directions (if you start from dry rice, you need about 75 g). Heat the oven to 200°C.

Finely chop the onion. Brown the minced beef and onion in a pan in a splash of oil. Season the mixture with salt, black pepper and paprika.

In a bowl, mix together the cooked rice, the browned beef and onion mixture and the crushed tomatoes.

Wash the bell peppers, cut off their tops and remove the seeds. Place the peppers in an oven dish and fill them with the beef and rice mixture.

Sprinkle the grated cheese over the peppers. Bake in the oven (200°C) for about 25–30 minutes, until the peppers have softened and the cheese has melted nicely.
